In Homer's "Odyssey", 1000 years before Christ, Polyphemus the Cyclops produces cheese. Moreover, Aristotle wrote about milk processing 400 years before Christ. Later literature also described the Swiss mountains, the Emmental region and its cheese: Goethe used his Swiss travel experiences and knowledge of cheese in his lyrical drama, "Jeri und Bäteli". Furthermore, the Bern romantics used the production of Emmental cheese in the 18th century as one of their themes. And Jeremias Gotthelf wrote about the golden age of the cheese trade.
